 *Broccoli Halloumi Pasta*



*Description:*

A creamy and satisfying pasta dish combining tender broccoli, crispy halloumi cheese, and a rich vegetable sauce.


*Ingredients:*


🥦 *Pasta and Vegetables*

- 300g pasta

- 1 small broccoli, cut into florets

- 1 onion, chopped

- 2 garlic cloves, minced


🧀 *Halloumi and Sauce*

- 200g halloumi, cubed

- 150ml cream or milk

- 1 cup vegetable stock

- 1 tbsp olive oil

- 1/2 tsp black pepper

- Salt, to taste

- 1/2 cup pasta water (optional)


*Instructions:*


1. Cook pasta in salted water until al dente. Add broccoli florets for the last 3 minutes. Reserve pasta water and drain.

2. Heat olive oil in a pan; fry halloumi until golden. Set aside.

3. Sauté onion and garlic in the same pan for 2 minutes.

4. Add vegetable stock; simmer 5 minutes.

5. Stir in cream or milk; add pasta, broccoli, and halloumi. Toss until coated, adding pasta water if needed.

6. Season with salt and pepper. Garnish with fresh parsley.
