Creamy Balsamic Chicken with Roasted onions and sun-dried tomatoes
Ingredients (serves 4):
4 boneless, skinless chicken breasts
2 large onions, sliced
1 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup balsamic vinegar
2 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper to taste
Fresh basil for garnish (optional)
Instructions:
Step 1: Roast Onions
Preheat oven to 400°F (200°C). Toss sliced onions with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes until caramelized.
Step 2: Cook Chicken
In a large skillet, heat a bit of olive oil over medium heat. Season chicken breasts with salt and pepper. Cook for 6–7 minutes on each side until golden and cooked through. Remove from skillet and set aside.
Step 3: Make Sauce
In the same skillet, add minced garlic and sun-dried tomatoes, sauté for 1–2 minutes. Pour in balsamic vinegar and let it reduce for a few minutes. Stir in heavy cream and simmer until slightly thickened.
Step 4: Combine and Serve
Return chicken to the skillet, spoon sauce over the top, and add roasted onions. Cook for an additional 2–3 minutes to heat through. Garnish with fresh basil if desired.
