📝 Ingredients (Serves 3–4):


Chicken & Marinade

Boneless chicken cubes – 500 g

Ginger-garlic paste – 2 tbsp (30 g)

Red chilli powder – 1½ tsp (4 g)

Black pepper powder – ½ tsp (1 g)

Paprika / Kashmiri chilli – 1 tsp (3 g)

Salt – 1¼ tsp (7 g)

Soy sauce – 1 tbsp (15 ml) 

Vinegar or lemon juice – 1 tbsp (15 ml)


Coating

Egg – 1 large

Cornstarch – 5 tbsp (40 g)

All-purpose flour – 2 tbsp (15 g)

Sesame seeds – 1½ tbsp (15 g)


For Frying

Oil – as needed (deep frying)

👩‍🍳 Method:


1. In a bowl, add chicken, ginger-garlic paste, all spices, salt, soy sauce, and vinegar. Mix well.


2. Add egg, cornstarch, flour, and sesame seeds. Mix until chicken is well coated (thick sticky batter).


3. Rest for 10–15 minutes for better flavor.


4. Heat oil on medium heat.


5. Fry chicken in batches until golden, crispy, and fully cooked (about 4–5 minutes).


6. Remove on kitchen paper and serve hot with garlic mayo or chilli dip.

For extra crunch, fry once on medium heat, rest 2 minutes, then refry on high heat for 30–40 seconds.
