Garlic Chicken Fettuccine in Spicy Mozzarella Cream
Ingredients (Serves 4):
12 ounces fettuccine pasta
1 1/2 pounds boneless skinless chicken breasts, cut into pieces
2 tablespoons olive oil
3 tablespoons unsalted butter, divided
1 tablespoon Cajun seasoning
1 teaspoon garlic powder
Salt and pepper, to taste
1 small onion, diced
4 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup chicken broth
1 1/2 cups heavy cream
4 ounces cream cheese, softened
1 cup shredded provolone cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Chopped parsley, for garnish
Directions:
1. Boil a large pot of salted water. Cook the fettuccine until al dente, then drain and set aside.
2. Toss the chicken with Cajun seasoning, garlic powder, salt, and pepper. Heat the olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the chicken and cook until golden and done, about 6 to 7 minutes. Remove and set aside.
3. Reduce heat to medium. Melt the remaining butter in the skillet. Add the diced onion and cook until soft, about 3 minutes. Add the minced garlic and cook for 30 seconds.
4. Sprinkle flour over the onion mixture and stir for 1 minute. Slowly whisk in the chicken broth and heavy cream until the sauce turns smooth and begins to thicken.
5. Add the cream cheese, provolone, mozzarella, and Parmesan. Stir until everything melts into a thick, spicy, creamy sauce.
6. Return the chicken to the skillet, then add the fettuccine. Toss gently so the sauce coats all the noodles.
7. Simmer for 2 to 3 minutes until heated through. Taste and adjust seasoning. Garnish with parsley.
