Mongolian Beef Fried Rice

 Mongolian Beef Fried Rice

Ingredients:

1 lb flank steak, thinly sliced

3 cups cooked rice (preferably day-old)

2 tbsp soy sauce

2 tbsp hoisin sauce

1 tbsp brown sugar

1 tbsp sesame oil

2 green onions, sliced

3 cloves garlic, minced

1-inch piece ginger, minced

2 eggs, scrambled

1 tbsp vegetable oil

Instructions:

In a small bowl, mix soy sauce, hoisin sauce, brown sugar, and sesame oil. Set aside.

Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef and cook for 3-4 minutes until browned. Remove from the skillet and set aside.

In the same skillet, add garlic and ginger, cooking for 1 minute.

Add the cooked rice and soy sauce mixture, stirring to combine.

Push the rice to one side of the skillet, add the scrambled eggs to the other side, and cook until set.

Add the beef back to the skillet along with the green onions. Toss everything together.

Serve hot.
