🌶️🥭 Sweet, spicy, and creamy! ✨ Tender chicken cooked in coconut milk with juicy mango chunks and a kick of heat. Perfect for a tropical dinner that wows! 🍗🥥


Ingredients:


1½ lbs boneless chicken thighs, cut into bite-sized pieces


1 cup ripe mango, diced


1 can (13.5 oz) coconut milk


2 tablespoons coconut oil


1 small onion, finely chopped


3 cloves garlic, minced


1 tablespoon fresh ginger, grated


1–2 teaspoons chili paste (adjust to taste)


1 teaspoon paprika


½ teaspoon ground cumin


Salt and black pepper to taste


Fresh cilantro, chopped (for garnish)


Instructions:


Heat coconut oil in a large skillet over medium heat (2 minutes).


Sauté the onion until soft and translucent (5 minutes).


Stir in garlic and ginger, cooking until fragrant (1 minute).


Add chicken, season with salt, pepper, paprika, and cumin, and cook until lightly browned (6–8 minutes).


Mix in chili paste and diced mango (2 minutes).


Pour in coconut milk, reduce heat, and simmer until chicken is tender and sauce thickens (15–18 minutes).


Taste and adjust seasoning. Remove from heat.


Garnish with fresh cilantro and serve warm with rice or flatbread.
