This simple and flavorful Chicken & Veggie Stir-Fry is a fast, healthy meal packed with color and nutrients. Tender strips of chicken are sautéed with sweet red peppers, juicy tomatoes, onions, and crisp broccoli—perfect for lunch, dinner, or meal prep!


𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:


1 chicken breast, sliced into strips


1 cup broccoli florets


1 red bell pepper, sliced


1/2 onion, sliced


1/2 cup cherry tomatoes (or diced tomatoes)


1 tbsp olive oil


Salt & pepper


1/2 tsp paprika


1/2 tsp garlic powder


Optional: chili flakes, soy sauce, lemon juice


𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:


Cook the Chicken:

Heat olive oil in a pan. Add sliced chicken and season with salt, pepper, garlic powder, and paprika.

Cook until golden and fully done.


Add the Veggies:

Add onions, peppers, and tomatoes. Sauté 4–5 minutes until softened.


Finish with Broccoli:

Add broccoli last to keep it slightly crisp. Stir everything together for another 2–3 minutes.

Optional: add soy sauce for savory depth or lemon juice for brightness.


Serve Warm:

Enjoy as is, or pair with rice, quinoa, or noodles.
