Creamy Cottage Cheese Chicken, Mushroom and Spinach Casserole
This creamy casserole is a go-to in my household! It's packed with flavor and is a wonderful way to use up leftover chicken. The kids love the cheesy goodness, and I love how easy it is to throw together after a busy day.
Ingredients:
2 cups shredded cooked chicken
1 cup cottage cheese
8 oz mushrooms, sliced
2 cups baby spinach, roughly chopped
1/2 cup shredded mozzarella
1 small onion, diced
1 tbsp olive oil
Salt and pepper to taste
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3–4 minutes.
3. Add sliced mushrooms to the skillet and cook until they’re soft, about 5 minutes.
4. Stir in the chopped spinach and cook until wilted, around 2 minutes.
5. In a large bowl, combine shredded chicken, cottage cheese, sautéed vegetables, salt, and pepper. Mix well to combine.
6. Transfer the mixture to a greased baking dish and top with shredded mozzarella.
7. Bake in the preheated oven for 25–30 minutes, or until the cheese is melted and bubbly.
