High-Protein Chicken Cottage Cheese Enchilada Bowls
These enchilada bowls have become a weeknight favorite in my house—quick to whip up, packed with flavor, and the kids love the creamy texture! Plus, they’re a great way to sneak in some extra protein.
Ingredients:
2 cups cooked, shredded chicken
1/2 cup blended cottage cheese
1/2 cup low-sugar enchilada sauce
1/4 cup shredded cheddar or Mexican blend cheese
1/4 cup diced bell peppers (optional)
1 tbsp chopped cilantro
1/2 tsp cumin
Salt & pepper to taste
Instructions:
1. In a large mixing bowl, combine the shredded chicken, blended cottage cheese, enchilada sauce, cumin, and diced bell peppers if using. Stir until everything is well coated.
2. Season the mixture with salt and pepper to taste.
3. Transfer the mixture to an oven-safe dish and spread it out evenly.
4. Sprinkle the shredded cheese on top.
5. Preheat your oven to 350°F (175°C) and bake for about 15–20 minutes or until the cheese is melted and bubbly.
6. Remove from the oven and garnish with chopped cilantro before serving.
